cookie dough freezer fudge

When you first make freezer fudge, it’s a bit of a hallelujah moment.  Much like when you first learn that there is such a thing as banana ice cream (on that note check out this recipe!).

 

This freezer fudge has a rich chocolate flavour with nutrient-dense cacao, creamy cashews and delicious biscuity maca.  It won’t last long in your freezer, that’s for sure!

 

ingredients

 

125g cashews

175g medjool dates, pitted

2 tbsp cacao

2 tbsp maca

 

 

Prep:  5 minutes (+ freezing time)

Cook:  0 mins

Serves:  16 (with bite sized morsels of deliciousness)

 

 

1.  Blend all of the ingredients with a touch of water (just enough to combine, not too much)*.

 

2.  Put the mix in a freezer proof dish (approx 6" x 6") lined with greaseproof paper and freeze overnight. 

 

3.  Once the mixture is frozen, transfer it onto a chopping board and cut it into bite sized pieces.  Store in the freezer.

 

*If you prefer a smoother finish, you can soak the cashews for a few hours before hand but we personally like that little bit of crunch!
