carrot cake energy balls

All of the delicious flavours of a regular carrot cake but none of the guilt!  A combination of healthy and wholesome ingredients that pack a flavour punch with just the right amount of delicious cinnamon, nutmeg and ginger.  

 

These carrot cake energy balls make the perfect pre-workout or lunchbox snack.

ingredients

 

1 grated carrot

200g dates

100g walnuts 

100g pecans

50g raisins

Zest and juice of 1 orange

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger

40g desiccated coconut

 

 

 

Prep:  15 mins

Cook:  0 mins

Serves:  18

 

 

1.  Combine all of the ingredients (except for the coconut) in a food processor and blend until they are mixed together. 

 

2.  Roll the mixture into balls and cover in the coconut.  That’s it!
