sweet potato wedges

Sweet potato is a nutrition powerhouse with 110% of your RDA of vitamin A and 100% of your vitamin C, all in just one serving of a 250g potato.

 

These wedges are about as easy as it gets in cooking terms; you just chop them up, put them on an oven tray and bake them – that’s it!  No oil or salt required. 

 

Serve these with a dollop of homemade tomato ketchup and a sprinkling of vegan parmesan – scrumptious!

 

ingredients

1 sweet potato (approx 250g)

 

Prep:  2 minutes

Cook:  45 minutes

Serves:  1

 

1.  Preheat your oven to 180C.

 

2.  Wash your sweet potato and chop it into wedges.

 

3.  Put your wedges on to an oven tray and bake for around 45 minutes or until soft and cooked through.
