rhubarb crispy crumble

A delicious dessert packed full of flavour with tart rhubarb and sweet strawberries, topped off with a nutritious and wholesome crispy crumble.

 

This crumble is incredibly easy to make; a perfect weekend recipe to make with the kids and a real crowd pleaser!

 

ingredients

 

Filling:

 

500g rhubarb, cut into 1” slices

200g strawberries, halved

2 tbsp coconut sugar

 

Topping:

 

75g oats

30g ground almonds

50g pecans, roughly broken up

30g coconut sugar

40g coconut oil, melted

 

 

Prep: 10 mins

Cook: 45 mins

Serves: 4-6

 

1.  Preheat the oven to 175°C.

 

2.  Mix the filling ingredients (rhubarb, strawberries and sugar) together in a baking dish.

 

3.  Mix the topping ingredients together with your hands until thoroughly combined.

 

4.  Sprinkle on top of the filling and bake for 45 minutes.
