These Easy Banana Pancakes are made with just four natural, healthy ingredients that you are bound to have in your kitchen or pantry and are so easy to make they have become a firm favourite at The Clean Co HQ. They are naturally sweetened by the ripe banana and the oats add a light and fluffy texture.
There is no need to wait for breakfast to serve up pancakes, these take just ten minutes to make with very little mess; why not whip up a batch the next time your best friend pops around for a cup of tea? That’s friend-brownie-points right there.
These perfect American-style vegan pancakes are just begging to be stacked high and smothered in lashings of fresh fruit and creamy nut butter. If you are feeling fancy, you can also sprinkle some chocolate chips into the batter.
Don’t fight the deliciousness; who cares if it’s tea time?
1. Blend all of your ingredients together in a blender such as a Vitamix and leave to sit for around five minutes.
2. Whilst your pancake batter is sitting, heat a little bit of coconut oil in a non-stick pan over a medium to high heat.
3. Once your batter has sat for five minutes and the oil has melted into your pan, use some kitchen towel to (carefully!) wipe the excess oil from the pan.
4. Pour your mix into the pan (about 2 tbsp per pancake) and cook for around 3-4 minutes before flipping them over and repeating on the other side. Both sides should be a nice golden brown colour.
Tip 1: We like to smother our pancakes in coconut nectar and fresh fruit so we don't make our batter too sweet. If you prefer a sweeter pancake batter, feel free to add a tbsp of coconut sugar to the mix before cooking.
Tip 2: These pancakes also freeze well so why not batch-make, pop in the freezer and then micorwave for 30 seconds to 1 minute when you are ready for round 2?
