chocolate chip cookie nice cream

Nice cream might well be one of the greatest vegan food discoveries that there has ever been.  Not only is it one heck of a lot better for you than regular ice cream, it actually tastes better too not to mention it is cheaper, creamier and you can have whatever flavor you desire!  Who said being vegan was difficult?!


This version is combining creamy banana nice cream with crunchy cacao nibs and a hint of super-food maca for that delicious biscuity flavor.  Enjoy!




4 bananas, frozen overnight

3 tbsp cacao powder

1 tbsp maca

1 tbsp cacao nibs



Prep:  10 minutes

Make:  5 minutes

Serves:  1 for a big breakfast or 2 for a more modest dessert




1.  Leave your frozen bananas out of the freezer for 10-15 minutes to thaw them slightly and make processing them easier.


2.  Blend the bananas with the cacao and maca (and a little water if necessary) in your high-speed blender (a Vitamix is the king of nice-cream blenders!).


3.  Stir in the cacao nibs and serve.
